Our aim is to maintain the traditional values of Hangi cooking where the meat will be moist and very tender, with a unique flavour.
Foods best suited to Hangi cooking are – Pork, Lamb, Chicken, Beef, Kumara (sweet potato), Potato, Sweet Corn, Pumpkin, Carrots, and Cabbage.

Pronounced Harng—ee, it is a traditional Maori method of cooking food.
In Pre - European times native Maori cooked their meals in earth pits. These pits contained heated stones that steamed the food, which had been placed in baskets made of flax. This pit was then covered with banana leaves and dirt to keep the heat in and cooked slowly for 6 – 8 hours.
While this method of cooking is still used by traditional groups of Maori, Unique Hangis maintain the traditional methods but also comply with all Health and Safety regulations.
Today a pit is dug large enough to fit stainless steel baskets (size depends on how many we are catering for). The baskets are lined with foil and cabbage leaves, all meats are seasoned and placed on the bottom baskets in the pit. Vegetables are placed into their own basket and this basket is then lowered onto a bed of pre-heated rocks. Damp sheets and blankets are then placed strategically around and on top of the baskets and covered completely with dirt for several hours.
